Sodium bicarbonate CAS#144-55-8

Stable Physical Form: Appears as white powder or fine monoclinic crystals, odorless with a mild salty taste for easy handling.

Controlled Thermal Decomposition: Gradually decomposes above 50°C and fully breaks down at 270°C into safe by-products such as sodium carbonate, CO₂, and water.

Mild Alkalinity in Solution: Acts as a weakly alkaline acidic salt, making it suitable for controlled chemical and food applications.

Effective Leavening Function: Widely used as a food leavening agent due to its ability to release carbon dioxide during reactions.

Products Description of Sodium bicarbonate CAS#144-55-8

Sodium bicarbonate, also commonly referred to as baking soda (sometimes confused with sodium carbonate and caustic soda), appears as a white powder or opaque fine monoclinic crystal. It is odourless with a saline taste, and its water solubility is lower than that of sodium carbonate. When heated above 50 °C, the solid gradually decomposes into sodium carbonate, carbon dioxide and water, achieving full decomposition at 270 °C. As an acid salt yielded from the neutralization reaction between a strong base and a weak acid, sodium bicarbonate displays weak alkalinity upon dissolution in water. This characteristic makes it widely adopted as a leavening agent in food processing. Sodium carbonate remains as a residue after its reaction; excessive dosage may impart an alkaline off-flavour to final food products.
